For the 2015 season we made 3 versions, all for the Coffee Collective:
- Dry + Underwater Fermentation
- Honey Process
Juana has Kenya trees growing under a forest canopy at the top of a hill at 1729 m going up on the north side of the Santa Ana volcano.
She's an example of the least you intervene, the better, as her trees are basically growing wild under the shade of larger trees and its one of the best coffees we have ever tried.
No one had ever payed attention to her farm and when I saw it, I knew there was something special. We asked Juana's family to harvest her Kenya variety separately and we made a natural process on raised beds. We sent the coffee to Rubens Gardelli, who roasted it himself, won the Brewers in Italy and then went on to place 2nd in the World. It was a very rewarding finish for a first year working with Juana.
This 2015 season, Miakela from the Coffee Collective used it to win the Finnish Brewers Cup and took it to the World Finals.
